What do I make with 40 pounds of Sweet Potatoes?!?!

40 pounds of sweet potatoes!
Last night we made sweet potato gnocchi (see below in the wok) with a butter maple sage sauce. 
 We also made a ginger, carrot sweet potato soup tonight. 

Any other suggestions are welcome! Except for chips, fries, etc, soups.   I have enough suggestions for that.

  1. Grated sweet potato ---> latkes, breads, muffins, probably even cookies etc.

    I love sweet potatoes! I had this Japanese alcohol called sochu that was made from sweet potatoes. Even that was good to try to make imo sochu.

  3. Looks good! Def make the gnocchi! I just looked at a bunch of different recipes online and used a lot of them. It makes about seven servings though!
